War on Waste

Hadley Park Hotel War on Waste ~ Drive for Efficiency

Following the Spring opening our £1.5million extension incorporating new bedrooms, a state of the art function suite, new bar, Restaurant refurbishment, and extended kitchen, the team at the Hadley are now focusing on improving efficiencies at all levels, including waste, heating, lighting, and of course food.

Reducing food waste

Part of the refurbishment included an investment of approx £50,000 to ensure we minimise waste, and maximise freshness for our restaurant diners, and regular function and wedding attendees. It took a lot of intensive research to ensure we procured the most efficient equipment, materials and methods in the new kitchen. We can cater from a function of up to 200 diners, all the way to an intimate meal for two, and the kitchen and the team need to be able to accommodate this at all times – sometimes all at once. We invested in a larger kitchen area, with increased figures to keep produce fresh, as well as a walk in freezer to ensure all produce was kept well with the hygiene regulations, and in the best conditions. One of the largest single investments was our ‘Rationale’ Machine – which sounds like something out of a sci-fi movie, but it basically means we can multi cook many dishes all at once, to the highest standards, including vegetables to order for each diner at a function, rather than providing mass produce which often gets thrown away.

Head Chef Tim Wesley is always keen to get the best cuts of meat from our local suppliers – He orders a whole beast from our supplier such as ‘Teds Farm in Sherriffhales. Ted is great, and he is very efficient with his cuts – also supplying us with the off-cuts so we can use these for stocks, soups, sauces, and some popular dishes like pigs trotters, and belly pork which often appear on our menus – We also source local game including venison, which means we can make some fantastic stews in these cold winter months – with no waste on the plates when they come back either.

Recycling is a key aspect to the Hadley Park

Recycling takes on a whole new meaning when it comes to “wall art” – the latest top fashion trend for homes and businesses which want to stand out from the crowd, recycling waste metals.

We asked Michelle Lewnes to come up with suitable themed designs for a second new function room and ten new bedrooms. All the artwork is made from 95% recycled materials including tin and iron. Some pieces could have been a tin of baked beans in a previous life!

It is a stunning effect. We are really pleased with Michelle’s efforts. These pieces are quite unique and really bring the function room to life. The hotel bedrooms are equally as tasteful and beautifully decorated in individual designs for each room.
